The best way to ensure that your diet is gluten and dairy-free is to eat whole foods. Fruits, vegetables, meats, and grains like quinoa, rice, and buckwheat are all naturally gluten and dairy-free. The best milk for cooking really depends on the flavor you're looking for. For example, if you're cooking a savory dish, you can try soy milk or hemp milk. If you're cooking a sweeter dish, try alternatives such as oat milk. This option lends a sweet flavor to everything from soups to curries and beyond.
The demand for soy milk comes from its creamy texture and slightly nutty flavor, making it an excellent cooking and baking ingredient. It's the closest drink that resembles cow's milk, per a taste test and online public sentiment.
Coconut cream or milk, which usually comes in a can, is the perfect replacement for the creamiest form of dairy: whipping cream. The thick cream of coconut has the consistency of butter and is white as whipping cream.
Oat Milk. Oat milk is perhaps the creamiest of all the plant milks. Its thick creamy texture means it's one of the closest plant-based milks to resemble dairy milk. Oat milk is quickly becoming a favorite non-dairy alternative to milk with popular brands like Oatly disrupting the traditional milk industry.
A handful of uncooked rice. That's all folks, just a handful of white rice. Any kind will do: jasmine, basmati, short grain, long grain. When added to a brothy (or watery, even) soup, and left to simmer for 20-30 minutes, the rice breaks down, releasing its starch and thickening the liquid that it's cooking in.
Potatoes that are low-starch and high-moisture hold together better. Yukon Gold potatoes are on the medium-starch side and will hold their shape in soups. Red potatoes fall into the low-starch category, as do smaller, newer potatoes. Fingerling potatoes will do well in soups, as will long white potatoes.
Others are lactose intolerant, which results from an enzyme deficiency that makes it impossible to break down the lactose (a sugar found in dairy) in one's system. People with one or both of these conditions don't necessarily need to avoid eggs as they are devoid of milk proteins and lactose. Eggs are also gluten free.
If you're vegan or have a dairy intolerance, we have good news: peanut butter is both dairy-free and gluten-free! Most peanut butter is made from peanuts, salt, palm oil, or hydrogenated vegetable oil (Processed peanut butter may contain some added sugars, too).
