These Chicken Alfredo Quesadillas are an easy lunch, dinner or snack! They’re filled with leftover chicken, Alfredo sauce and cheese — easy comfort food! A 10 minute meal.
So normally here on TRR, the first Thursday of the month is 30 Minute Thursday! As much as I love 30 minute meals (be honest — we all do!), I won’t pass up a 10 minute meal either.
It just doesn’t get much easier.
I love prepping food ahead of time because it makes for such easy meals throughout the week. These quesadillas are packed with chicken (cook it ahead of time for the week!), Alfredo sauce (buy your favorite brand or try my favorite — this Pesto Spinach Alfredo Sauce), and cheese — whichever kind is your favorite!
Quesadillas are one of our favorite easy meals (especially when the fridge is stocked with Dempster’s™ tortillas!) — you can stuff them with anything you have in the fridge and they are ready in just a few minutes.Basically – top, fold and heat! It doesn’t get much easier than that.
I wanted to come up with a new twist this time, but still keep the ingredient list on the low side. With a 4 and almost-2-year-old, sometimes I only get a few minutes to quickly throw something in the pan! And since Chicken Alfredo has always been one of my favorite comfort foods, I thought this was the perfect way to enjoy it all week long!

Ingredients
- 1 tortilla original, whole wheat, or another flavor!
- 1/4 cup Alfredo sauce
- 1/2 cup cooked chicken
- 1/3 cup shredded cheese
Instructions
Lay tortilla flat. Spread half of tortilla with Alfredo sauce, top with chicken and cheese.
Place in a pan and heat over medium heat until cheese is gooey. Serve!

I love the idea of a chicken Alfredo quesadilla, but the sodium levels are sport high. Any ideas on how to lower it?

Really the only way to do that is to make everything from scratch and adjust the seasoning to suit your tastes

I have 5 to feed, any ideas on doing this in the oven on a cookie sheet? 300F or 350 maybe? About 10 minutes?

LOVE the simplicity of this! We do the same thing with fajitas – scrounge around our fridge for whatever remnants of dinners we can throw together into some fajitas. I love the idea of cheesy quesdadillas! So quick and easy to make, and so satisfying!

Quesadills are one of my favorite foods, especially since the prep time is so simple! I’ve never had an alfredo version, so I’m LOVING this! Why haven’t I thought of this before?! Such a great way to jazz up a quesadilla and perfect for a weeknight meal!
