  • 1/2 cup heavy whipping cream
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon pepper (or to taste)
  • 1 cup cheddar cheese (shredded)
  • 1 tablespoon butter
  • 1 shallot (minced)
  • 2 cloves garlic (minced)
  • 4 turkey sausage patties (cooked and diced)
  • 4 slices bacon (cooked and diced)

Chef’s Tip: shred cheddar cheese from a block to avoid the added starch in pre-shredded bagged cheese. Freshly grated cheese also melts better without any gritty texture.

Cook the sausage and bacon, if necessary, and dice. Shred the cheese and mince the shallot and garlic.

Whisk the eggs, heavy whipping cream, smoked paprika, salt and pepper together in a medium bowl. Stir in the cheese. Set aside.

Melt the butter in a deep oven-proof skillet or Dutch oven over medium heat. Add the shallots and garlic and cook 3-4 minutes or until the shallots are softened and beginning to brown.

Add the sausage and bacon and stir to combine, then spread out evenly over the bottom of the pan.
